Sauvignon Blanc

Sparkling in the bottle, the vibrant green hue glints in the glass. Heady floral aromatics of passionfruit flower, soft yellow fruits, pine-lime, lemongrass and spice waft from the glass. The palate is filled with sweet and weighty passionfruit, green mango and exotic spice framed by fine talcy acidity and slatey minerality. A touch of oak adds textural complexity – the finish is long and salivating.

The Season
The 2023 growing season was the fourth cool season in a row. These 2020- 2023 La Nina seasons will be remembered for their challenges, but also the lovely elegant wines they have produced. Cool is one thing, but wet and humid is another. Extreme October-December rains and high humidity kept the vineyard team on their toes. Keeping the vineyard disease free and balanced during this period was the key to this wonderful vintage. From Jan-April we saw welcome dry periods with all fruit picked between March 10th and April 4th.
Tasting Notes
Vibrant luminescent green a brilliant colour the exotic yellow fruits with hints of lemongrass, guava and pear explode from the glass. The palate is driven by intensity of fruit flavour and complexity with a hint of spice. This is a beautifully weighted and textural wine with great balance and mouth-watering freshness. Drink now or cellar for up to 3-5 years.
Wine Making
Handpicked on the 11th of March the whole bunches were cooled overnight and pressed the following morning. After settling, 20% of the juice was filled to new French oak barrels for 20 days of fermentation before incorporating back with the tank component. The new French oak lifts the nose of the wine into a new dimension whilst also building structure and mouthfeel to the finished wine. The wine spent a further 5 months on full lees to build texture via yeast autolysis and to help retain the freshness seen in the grapes at harvest. Bottled in August 2023 with 202 dozen produced. .
