Sauvignon Blanc

  Pale and luminescent in colour, the aromatics are intensely floral with notes of white blossom, passionfruit pith, white nectarine, lemon balm and jasmine. The palate is energetic, focussed and lithe with cascading layers of tropical fruits, just ripe passion fruit, guava, finger lime, green mango and hints of tangerine and lemongrass. Lively acidity lifts the fruit and gives the wine lovely drive, a touch of oak adds textural complexity – the finish is long and salivating.

The Season
The 2025 growing season finished as it started – very dry! Whilst our dams were full from a winter of average rainfall, the soil moisture content was lower than we’d seen after some unseasonably warm and dry weather during September and October. Budburst was the earliest that we had seen at Medhurst and the vines powered through the first growth phases with the warm Spring weather. We could see from the outset that bunch numbers were higher than in recent years and that the crop would be a strong one. An early flowering was followed by fantastic growing conditions and the vines were carefully managed to create an optimal canopy ensuring a perfectly ripe crop. The resulting fruit was some of the best we have seen with fabulous quality across all of our varieties. As usual, Vintage processing was an incredibly busy time, but the quality of the harvest has resulted in wines of a very special character that we look forward to seeing in bottle when the time is right. We are excited about what 2025 Vintage has in store!
Tasting Notes

Wine Making
Handpicked on the 16th February the fruit was cooled overnight and whole bunch pressed the following morning. After light settling in tank, 20% of the juice was racked with some solids to fill two new and one old French oak barrique for fermentation—remaining in new oak for 20 days and old for 2 months. This technique adds texture and mouthfeel to the finished wine. The remaining 80% of the juice underwent a long and cool fermentation in tank to capture varietal freshness after which time the two parcels were blended together. The wine spent a further 4 months on full lees in tank to build complexity before bottling in July.
