The Season
THE SEASON The 2017 growing season was cool and mild, producing wines with wonderful acidity, flavours and fine boned slinky tannins. Due to such mild conditions and a relatively overcast summer, vintage began three weeks later then in 2016 and 2015 - on March 5th. The wines show great poise, fruit flavour and energy, another classic Yarra Valley vintage in the making
Tasting Notes

With tremendous poise and elegance, the 2017 Medhurst Reserve Cabernet Sauvignon will continue to improve with careful cellaring for over a decade.
Wine Making
The most balanced, even and flavorsome 5 rows of the Cabernet Sauvignon block on the property is farmed each year for this classic single site wine. Low crops and careful canopy management ensure powerful varietal flavours and great intensity in a medium bodied frame. 1.2t was picked on the 24th March and placed in the coolroom overnight. The following morning the cool bunches were destemmed and crushed into a single open fermenter where the grapes underwent fermentation and remained on skins for 30 days. This extended maceration produced silky tannins, essential for the structure and longevity of the wine. After pressing, the wine was racked to French oak barriques (35% new) for extended elevage (20 months) until bottling onsite on 6th February 2019. Only 29 dozen produced.
Food Pairing
Ideal food matches are many, from slow cooked middle eastern lamb shoulder, a classic cassoulet or simply a dry-aged t-bone grilled to perfection with a simple salad.
