The Season
The 2018 growing season began with a later then average budburst, and led into excellent conditions for flowering and set, auguring well for an even and good sized crop. However 200mm of December rain came and created an array of growing concerns, including large dense canopies and ensuing disease pressures. All hands on deck, removing unnecessary shoots, leaves and bunches in this time and a mild dry January-March saved this wonderful crop. The resultant fruit was ripe, balanced and the wines are approachable early with good prospects for long term cellaring. An excellent season of ripe, fresh flavours and understated power.
Tasting Notes
Very pale straw green, brilliant colour. Fresh and pure aromas of grapefruit, juniper, acacia and spice with complexing hints of toast and flint from barrel fermentation. Complex and textural style with a lovely weight. Superb balance. Drink now or cellar for up to 5-8 years.
Wine Making
After whole bunch pressing cloudy juice was filled to French oak barrels (20% new). All vessels had full solids included and all underwent indigenous fermentation over 20-40 days without cooling. Unrestained the temperatures ranged from 18-28 degrees celcius, building texture, pithiness, weight and burning off simple estery aromatics to show off a more mineral earthy side of Sauvignon Blanc. The wine spent 5 months in oak before transferring to stainless steel. As a blend in tank, the wine spent a further month on full lees to build texture via yeast autolysis and to help retain the freshness seen in the grapes at harvest. Bottled August 27th 2018 .

Best drunk with freshly shucked coffin bay oysters within it's briny southern ocean shell.
